Vegetable Salad

1. cucumber- 1 peeled and chopped


2. fresh tomatoes- 2 chopped

3. green onion- 2 minced

4. red bell pepper-4 chopped
5. radishes- 5 chopped
6. small jicama- 1 peeled and julienned
7. romaine lettuce leaves-6 bite size pieces
8.clove garlic- 1 minced
9. lemon juice-1 ½ tablespoons
10. olive oil-2 tablespoons
11.pomegranate juice-1 tablespoon
12. salt-1 teaspoon
13. ground black pepper-1 teaspoon
14. fresh dill-1 teaspoon chopped
15. fresh basil-1 teaspoon chopped
16. water-1 ½ teaspoons



Step 1

Toss together the cucumber, tomato, onion, pepper, radish, jicama, and lettuce in a large salad bowl. Whisk together the garlic, lemon juice, olive oil, pomegranate juice, salt, pepper, dill, basil, and water in a small bowl. Drizzle dressing over the salad just before serving
